Pour the Fresh Lime Juice over the diced fish, making sure it’s fully covered. The lime juice is what “cooks” the fish, so it’s super important to use enough! Stir gently and let it sit for about 10 minutes.
Chop and Mix Veggies 🌶️
While the fish is soaking up that limey goodness, chop your Red Onion, Jalapeño Pepper, Tomato, and Cilantro. Add them to the bowl with the fish. Season with a pinch of Salt and Pepper.
Fold in Avocado 🥑
Once the fish is white and opaque, gently fold in the diced Avocado. Be careful not to mash it! You want those beautiful green chunks to stay whole. This gives the ceviche a creamy texture that’s absolutely to die for.
