Step 1: Sear the Chuck Roast
Heat Olive Oil in a pan over medium heat. Sear the Chuck Roast on all sides for about 3 minutes each side to lock in flavor.
Step 2: Add Veggies
Chop the Carrots, Potatoes, and Onion. Place them at the bottom of the crock pot. Add the minced Garlic on top.
Step 3: Season and Add Broth
Place the seared Chuck Roast on top of the veggies. Season with Thyme, Rosemary, Salt, and Pepper. Pour in the Beef Broth.
Step 4: Cook Low and Slow
Cover and cook on low for 8 hours. The beef will become tender, and the vegetables will soak up all the rich flavors.

Let the roast rest for a few minutes before slicing. Serve with the vegetables for a complete, hearty meal.
