Step 1: Sear the Roast
Heat Olive Oil in a large pan over medium heat. Sear the Chuck Roast on all sides for about 3 minutes each side until browned.
Step 2: Add the Veggies
Chop Carrots, Potatoes, Onion, and Root Veggies. Place them in the bottom of your slow cooker.
Step 3: Season and Add Broth
Place the seared Chuck Roast on top of the veggies. Season with Thyme, Rosemary, Salt, and Pepper. Pour in the Beef Broth to cover the veggies and roast.
Step 4: Slow Cook to Perfection
Cover and cook on low for 8 hours, or until the roast is tender and easily shredded with a fork.

Let the roast rest for a few minutes before slicing. Serve with the veggies and broth for a comforting, healthy dinner.
