Ingredients

  • 3 Pounds Chuck Roast lean, trimmed
  • 4 Carrots peeled and chopped
  • 3 Potatoes cut into chunks
  • 1 Onion chopped
  • 2 Cups Root Veggies parsnips, turnips, or any favorites
  • 1 Tablespoon Olive Oil
  • 2 Cups Beef Broth low sodium
  • 1 Teaspoon Thyme dried
  • 1 Teaspoon Rosemary dried
  • Salt and Pepper to taste

Instructions

  • Step 1: Sear the Roast
  • Heat Olive Oil in a large pan over medium heat. Sear the Chuck Roast on all sides for about 3 minutes each side until browned.
  • Step 2: Add the Veggies
  • Chop Carrots, Potatoes, Onion, and Root Veggies. Place them in the bottom of your slow cooker.
  • Step 3: Season and Add Broth
