Ingredients

  • 2 Salmon Fillets about 4 oz each
  • 3 Cups Mixed Greens like Spinach, Arugula, or Kale
  • 1/2 Cucumber sliced
  • 1/2 Bell Pepper chopped
  • 1/4 Cup Cherry Tomatoes halved
  • 1 Tbsp Olive Oil
  • 1 Tbsp Lemon Juice
  • 1 Tsp Dijon Mustard
  • 1/2 Tsp Sea Salt
  • 1/4 Tsp Black Pepper
  • Fresh Dill optional garnish
  • Lemon Wedges for serving

Instructions

  • Cook the Salmon
Heat a skillet over medium heat and add a dash of Olive Oil. Place the Salmon Fillets in the skillet, skin side down, and cook for 4-5 minutes on each side until the salmon is cooked through and flakes easily. Set aside to cool slightly.
  • Prep the Salad Base
In a mixing bowl, add the Mixed Greens, Cucumber, Bell Pepper, and Cherry Tomatoes. Toss them together to create a colorful salad base.
  • Make the Dressing
In a small bowl, whisk together Olive Oil, Lemon Juice, Dijon Mustard, Sea Salt, and Black Pepper. This light dressing brings out the fresh flavors without overpowering them.
  • Combine Everything
Place the slightly cooled salmon on top of the greens. Flake it into bite-sized pieces with a fork if you like. Drizzle the dressing evenly over the salad.
  • Garnish and Serve
Add a sprinkle of Fresh Dill if you have it, and serve with Lemon Wedges for extra zing.
