Gluten-Free Thai Mango Sticky Rice (No Added Sugar!)

It’s a traditional Thai dessert made with sticky rice cooked in coconut milk and paired with juicy mangoes—simple, delicious, and naturally sweet with no added sugar. And the best part? It’s perfect for those following a gluten-free, vegan, and dairy-free diet!

Ingredients

  • 1 Cup Sweet Sticky Rice (also called glutinous rice)
  • 1 ½ Cups Water
  • 1 Can (14 oz) Coconut Milk
  • 3 Tablespoons  Maple Syrup (or any natural sweetener)
  • ¼ Teaspoon Salt
  • 2 Ripe Mangoes, Sliced
  • Toasted Sesame Seeds

Instructions

  • 1. Cook the Sticky Rice:
    Rinse the Sweet Sticky Rice in cold water a couple of times until the water runs clear.
    Then, soak it in water for about 30 minutes.
    Drain the rice and cook it in a pot with 1 ½ cups of fresh water over medium heat.
    Once it starts to boil, lower the heat, cover, and let it simmer for around 15 minutes or until the water is absorbed.
  • 2. Prepare the Coconut Sauce:
    While the rice is cooking, grab a small saucepan and pour in the Coconut Milk.
    Add the Maple Syrup and a pinch of Salt. Heat it on low, stirring gently until the sauce thickens slightly.
    Don’t let it boil—just warm it up enough to blend the flavors. 😋
  • 3. Mix the Rice with the Sauce: When the rice is done, gently fluff it with a fork.
    Pour half of the warm coconut sauce over the cooked rice and mix it in.
    Let it sit for about 10 minutes so the rice can absorb all that creamy goodness.
    Save the rest of the sauce for serving!
  • 4. Serve It Up:
    Time to plate! Scoop the sticky rice onto a plate and arrange the Sliced Mangoes next to it.
    Drizzle some of that extra coconut sauce over the top for extra creaminess.
    If you like a bit of crunch, sprinkle some Toasted Sesame Seeds as a garnish. 🌱🥭
