  • 4 Chicken Breasts boneless and skinless
  • 1 Cup White Rice or cauliflower rice for low-carb option
  • 1 ½ Cups Chicken Broth
  • 1 Lemon sliced
  • 1 Tablespoon Fresh Thyme or Rosemary
  • 2 Garlic Cloves minced
  • 1 Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • Fresh Parsley for garnish

  • 1. Heat the Olive Oil
    In a large pot, heat the olive oil over medium heat. The oil should be hot enough to sear the chicken.
  • 2. Sear the Chicken
    Place the chicken breasts in the pot and cook for about 5 minutes on each side until golden brown. Remove the chicken from the pot and set aside.
  • 3. Sauté the Garlic
    In the same pot, add minced garlic and stir for about a minute until fragrant. Make sure it doesn't burn.
  • 4. Add Rice and Broth
    Stir in the rice and pour the chicken broth over it. Add salt, pepper, and fresh thyme (or rosemary). Give everything a good stir.
  • 5. Place the Chicken Back
    Nestle the chicken breasts on top of the rice. Add lemon slices on top of the chicken. Cover the pot and bring everything to a simmer.
  • 6. Cook Until Rice is Tender
