- 1 Pound Chicken Breast Cubed
- 1 Cup Rice Brown or White
- 1 Cup Bell Peppers Chopped
- 1 Medium Onion Chopped
- 2 Cups Chicken Broth
- 2 Tablespoons Olive Oil
- 1 Packet Fajita Seasoning
- Salt and Pepper to taste
- Fresh Cilantro for garnish
Instructions
1. Heat the OilFirst, heat the Olive Oil in a large pot over medium heat. 2. Cook the ChickenAdd the Cubed Chicken Breast and season with Salt and Pepper. Cook for about 5-7 minutes until the chicken is no longer pink. 3. Add the VeggiesStir in the Chopped Onion and Bell Peppers. Cook for another 3-4 minutes until they are soft. 4. Mix in the RiceAdd the Rice and Fajita Seasoning to the pot. Stir everything together so the rice gets coated with flavors. 5. Pour in the BrothNow, add the Chicken Broth and stir well. Bring the mixture to a boil. 6. Simmer and CookReduce the heat to low, cover the pot, and let it simmer for about 15 minutes. This allows the rice to cook and soak up all the flavors. 7. Fluff and ServeOnce the rice is tender, remove the pot from heat. Fluff the rice with a fork and garnish with Fresh Cilantro.
