Ingredients

  • 2 Cups Shredded Romaine Lettuce
  • 1 Cups Shredded Red Cabbage
  • 1 Cups Julienned Carrots
  • 1 Cups Sliced Cucumbers
  • 2 Cups Shredded Chicken Breast
  • ½ Cup Chopped Fresh Cilantro
  • ½ Cup Roasted Peanuts (optional for extra crunch)
  • 3 Tablespoons Fresh Lime Juice
  • 2 Tablespoons Soy Sauce (or Coconut Aminos for Paleo/Gluten-Free)
  • 1 Tablespoon Fish Sauce (optional, but adds that authentic Thai taste)
  • 2 Tablespoons Honey or Maple Syrup
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Minced Ginger
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Red Pepper Flakes (for a little kick)

Instructions

  • 1. Make the Dressing:
    In a small bowl, mix together the Lime Juice, Soy Sauce (or Coconut Aminos), Fish Sauce, Honey, Garlic, Ginger, Olive Oil, and Red Pepper Flakes.
    Whisk it all up until it’s well combined. Taste it! If you like it tangier, add more lime juice. Want it sweeter?

  • 2. Prep the Veggies:
    Grab a big mixing bowl and throw in the Shredded Romaine Lettuce, Red Cabbage, Julienned Carrots, and Sliced Cucumbers.
