Ingredients

  • 2 Pounds Chuck Roast lean, trimmed
  • 1 Tablespoon Olive Oil
  • 4 Carrots peeled and cut into chunks
  • 3 Potatoes quartered
  • 1 Onion chopped
  • 3 Cloves Garlic minced
  • 1 Cup Beef Broth low sodium
  • 1 Teaspoon Thyme dried
  • 1 Teaspoon Rosemary dried
  • 1 Teaspoon Oregano dried
  • Salt and Pepper to taste

Instructions

  • Step 1: Sear the Meat
  • Turn the Instant Pot to sauté mode and heat the Olive Oil. Sear the Chuck Roast on all sides until it's browned (about 3 minutes per side). This locks in the flavor.
  • Step 2: Add the Veggies
  • Chop the Carrots, Potatoes, Onion, and Garlic. Place them in the Instant Pot around the roast.
  • Step 3: Add the Herbs and Broth
  • Sprinkle Thyme, Rosemary, Oregano, Salt, and Pepper over the roast and veggies. Pour in the Beef Broth to cover the bottom of the pot.
  • Step 4: Pressure Cook
  • Seal the Instant Pot lid and set it to pressure cook on high for 60 minutes. Once done, let the pressure naturally release for 10 minutes before opening.
  • Step 5: Serve and Enjoy
  • Remove the roast and let it rest for a few minutes before slicing. Serve with the tender veggies for a healthy, flavorful meal.
