Step 1: Sear the Meat
Turn the Instant Pot to sauté mode and heat the Olive Oil. Sear the Chuck Roast on all sides until it's browned (about 3 minutes per side). This locks in the flavor.
Step 2: Add the Veggies
Chop the Carrots, Potatoes, Onion, and Garlic. Place them in the Instant Pot around the roast.
Step 3: Add the Herbs and Broth
Sprinkle Thyme, Rosemary, Oregano, Salt, and Pepper over the roast and veggies. Pour in the Beef Broth to cover the bottom of the pot.
Step 4: Pressure Cook
Seal the Instant Pot lid and set it to pressure cook on high for 60 minutes. Once done, let the pressure naturally release for 10 minutes before opening.
Step 5: Serve and Enjoy
Remove the roast and let it rest for a few minutes before slicing. Serve with the tender veggies for a healthy, flavorful meal.
