Step 1: Preheat the Oven
Preheat your oven to 325°F (160°C) while prepping the roast.
Step 2: Sear the Meat
Heat Olive Oil in a large pan over medium-high heat. Sear the Chuck Roast on all sides until it’s browned (about 4 minutes per side). This helps lock in flavor.
Step 3: Prepare the Veggies
While the meat is searing, chop the Carrots, Potatoes, Onion, and Garlic. Set them aside.
Step 4: Assemble the Roast
Place the seared Chuck Roast in a large roasting pan. Add the chopped veggies around the roast. Pour the Beef Broth over everything. Sprinkle with Thyme, Rosemary, Oregano, Salt, and Pepper.
Step 5: Slow Roast
Cover the pan with foil and place it in the oven. Roast for 3 hours, or until the beef is tender and the veggies are cooked through.
Step 6: Serve and Enjoy
