  • 3 Pounds Chuck Roast lean, trimmed
  • 4 Carrots peeled and chopped
  • 3 Potatoes cut into chunks
  • 1 Onion chopped
  • 3 Cloves Garlic minced
  • 1 Cup Beef Broth low sodium
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Thyme dried
  • 1 Teaspoon Rosemary dried
  • 1 Teaspoon Oregano dried
  • Salt and Pepper to taste

Instructions

  • Step 1: Preheat the Oven
  • Preheat your oven to 325°F (160°C) while prepping the roast.
  • Step 2: Sear the Meat
  • Heat Olive Oil in a large pan over medium-high heat. Sear the Chuck Roast on all sides until it’s browned (about 4 minutes per side). This helps lock in flavor.
  • Step 3: Prepare the Veggies
